Italian Wedding Soup

Italian Wedding Soup

This soup get its name from the “marrying” of the greens and meatballs to the broth. It’s a delicious idea for dinner and easy to make!

Ingredients

1 lb ground pork
1 egg
1/4 cup bread crumbs
1/4 shredded parmesan cheese
1 tsp basil
1 tbsp onion powder
6 cups chicken broth
1 cup orzo pasta
1/2 cup finely chopped carrot
2 cups spinach
Olive oil

Instructions

To a large bowl, add the ground pork, egg, bread crumbs, shredded parmesan cheese, basil and onion powder (i like to add salt and pepper to taste). Mix everything together.

Measure out about 2 tbsp and roll them into meatballs setting them on a plate. Continue shaping meatballs until ground pork is used up.

Heat a large pot on the stove and add enough olive oil to lightly coat the bottom of the pot.

Add the meatballs into the pot browing/cooking them.

Add the chicken broth, orzo pasta and chopped carrot. Bring to a boil, reduce heat to a simmer and cook until the orzo pasta is cook through (just follow package directions for cooking times).

Add the spinach and let it wilt. Serve with some delicious Rhodes Bake and Serve dinner rolls and enjoy!
