Chicken and Dumplings

Indulge in Chef Bryan Woolley’s comforting Chicken and Dumplings, a dish that combines tender chicken, aromatic herbs, and fluffy dumplings. This easy-to-follow recipe will guide you through creating a heartwarming meal that’s perfect for the whole family.

Ingredients

4 tbsp butter
2 whole chicken breasts, cut into bite size pieces
1 large onion minced
2 cloves garlic, minced
2 cups sliced mushrooms
1 tbsp dried sage
1 10-ounce package frozen peas and carrots
1/4 cup flour
2 cups milk
2 cups chicken stock
Salt and pepper to taste
For the dumplings: 2 cups self rising flour
1/2 cup milk (plus more if needed), I also like adding 1 cup sour cream
1 egg
1 tablespoon chopped chives
½ tsp salt
½ tsp black pepper

Instructions

Heat a large pot on your stove with butter.

Sauté chicken pieces until fully cooked.

Add minced onion, garlic, mushrooms, frozen peas, carrots, and dried sage. Sauté until fragrant.

Sprinkle with flour and mix.

Pour milk and chicken stock into the pot, stirring to combine. Bring to a boil, then simmer for 10 minutes, stirring gently to prevent burning.

While chicken simmers, mix dumpling ingredients in a large bowl.

Using a large spoon, spoon dumpling mixture over the chicken. Cover and cook for about 5 minutes until dumplings are no longer doughy. Serve and enjoy!
