Ingredients

4 large baking potatoes
1 pound ground beef or turkey
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup chopped fresh cilantro (optional)
Salt and pepper, to taste
Olive oil, for brushing

Instructions

Preheat your oven to 400°F (200°C). Scrub the potatoes clean and pat them dry. Prick each potato several times with a fork to allow steam to escape during baking.

Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until the potatoes are tender when pierced with a fork.

While the potatoes are baking, heat a large skillet over medium heat. Add a drizzle of olive oil and sauté the diced onion and minced garlic until they become translucent and fragrant.

Add the ground beef or turkey to the skillet and cook until browned, breaking it up into small crumbles with a spatula or wooden spoon. Drain any excess grease.

Stir in the taco seasoning packet and cook for an additional 2-3 minutes, allowing the flavors to meld together. Remove from heat.

Once the potatoes are done baking, remove them from the oven and let them cool slightly. Reduce the oven temperature to 350°F (175°C).

Slice each potato lengthwise, being careful not to cut all the way through. Gently press the ends of each potato towards the center to create a pocket for the filling.

Spoon the taco meat mixture into each potato, dividing it evenly among them. Sprinkle shredded cheddar cheese over the top of each potato.

Place the stuffed potatoes on a baking sheet and return them to the oven. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
