Steak Fajitas

Ingredients

1 rib eye steak, cut into thin strips
1 red, yellow, orange and green bell pepper
1 small Anaheim pepper
1 medium sized onion, sliced
1 quarter green cabbage, sliced
1-2 tbsp southwest fajita seasoning or to taste
Corn tortillas
Vegetable oil
Prepared salsa

Instructions

Slice the rib eye steak into thin strips and set aside.

Thinly slice the peppers, onion and green cabbage. Set aside.

Heat a large sauté pan on the stove and add enough vegetable oil to lightly coat the bottom of the pan. Fry the corn tortillas to warm them up.

Add the steak strips to the pan and sauté for a couple of minutes. Add the remaining sliced vegetables (peppers, onions, cabbage…) and sauté for couple of minutes or until warmed through.

Serve the sautéed fajita filling on the warm tortillas with your favorite prepared salsa and enjoy! I like to melt some Velveeta style cheese with a cup of salsa and serve with the fajitas.

For delicious variations, use leftover roast cut into strip for the meat, add slice Nopales cactus, chicken pork or keep them fully vegetarian.
