Chef Bryan's Sloppy Joes, Carrot Slaw and Fruit Dessert

Sloppy Joes, Parsnip Slaw with a Fruit Parfait Dessert

Need to feed a crowd? These recipes are great for doing just that. Easy to make and delicious, your crowd will love having lunch at your house!

 

Ingredients

1 large onion, diced
1 tsp garlic, minced
4 medium tomatoes, diced
2 pounds ground hamburger
1 can pork and beans, approximate 15 ounces
1 pkg sloppy joe seasoning
2 tbsp Tomato Paste, Italian style
!3 large carrots, peeled if necessary
2 medium parsnips, peeled
1 inch fresh ginger root
1 large endive
1 cup cherry tomatoes
1/3 cup Italian Style Dressing
1/3 cup blue cheese crumbles, optional
!1 cup frozen raspberries, thawed
1 cup frozen mango pieces, thawed
1/2 cup sugar
1 cup greek yogurt, vanilla flavored
Prepared pound cake
olive oil
salt and pepper as needed

Instructions

To prepare the Sloppy Joe’s: Heat a large skillet on the stove and add just enough olive oil to lightly coat the bottom of the pan.

Add the diced onion, garlic and tomatoes to the pan and sauté until fragrant. About 2 minutes.

Add the hamburger to the pan and brown.

When the hamburger is browned, add the can of pork and beans, sloppy joe seasoning, and the tomato paste to the hamburger. Mix everything together, turn the heat down to a simmer and finish fully cooking the hamburger.

To make the Carrot Slaw: To prepare the carrots and parsnips, cut the tops and bottoms from them. Peel the carrots, parsnips and ginger root and set them aside. Trim the endive to remove any old leaves from it.

Place the shredding blade on your food processor and shred the prepared carrots, parsnips, ginger root and endive.

Transfer the shredded carrot slaw to a large bowl and add the cherry tomatoes. Pour the Italian style dressing over the carrot slaw and carefully toss to coat. Do not add the blue cheese crumbles to the slaw until just before service. Set aside until ready to use.

To make the Fruit Dessert: Be sure to rinse out your food processor bowl and place the blade into the bowl. Add the raspberries, mangoes and 1/2 cup sugar to the food processor bowl. If using frozen be sure they are thawed out. Puree the fruit together until smooth.

Add the vanilla flavored greek yogurt and the pureed fruit to a large bowl and fold together.

Spoon the fruit mixture over a prepared pound cake or your favorite cake and enjoy!
