Lemon Meringue Pie

Lemon Meringue Pie

Tart, sweet, creamy, delicious, favorite pie…however you look at it, this pie is definitely at the top of yummy list!

Ingredients

1 prepared 9 inch pie shell
1 cup sugar
2 tbsp flour
3 tbsp cornstarch
1 tsp salt
1 1/2 cups water
1/2 cup fresh lemon juice (about 2-3 lemons)
3 tbsp butter
4 egg yolks
For the Meringue: 4 egg whites
1/3 cup sugar

Instructions

Make or buy your favorite pie shell and set it aside until ready to pour the lemon custard into it.

In a large sauce pan add the sugar, flour, cornstarch and salt whisking these ingredients together until fully incorporated.

To the sauce pan, add the water, fresh lemon juice, butter and egg yolks. If desired, zest the lemons and add the zest to the lemon custard for a stronger lemon flavor.

While whisking bring the lemon custard to a boil to thicken.

Remove from the heat and strain through a fine mesh strainer. Pour the lemon custard into the prepared pie shell. Cover with plastic wrap allowing the plastic wrap to touch the top of the custard preventing it from forming a crust. Refrigerate until completely cool.

Preheat your oven to 350 degree’s.

Just before serving, add the egg whites to the bowl of a stand mixer and whisk. When foaming, pour the sugar into the foaming egg whites. Continue whisking to stiff peaks.

Remove the plastic wrap from the lemon custard and spoon the prepared meringue on top of the lemon custard spreading it evening right up to the crust being sure to “seal” the pie with the meringue.

Place the lemon meringue pie in the oven for about 10 minutes to brown the meringue.

Remove from the oven, serve and enjoy!
