Ingredients

1 pound Ground Beef (96% lean)
1/4 cup seasoned dry bread crumbs
2 egg whites or 1 egg, beaten
2 tablespoons water
1/4 teaspoon salt
1/8 teaspoon pepper
Apricot Dipping Sauce: 3/4 cup apricot preserves
3/4 cup barbecue sauce
2 tablespoons Dijon-style mustard

Preheat your oven to 400°F.

In a large bowl, combine 1 pound of lean Ground Beef, 1/4 cup of seasoned dry bread crumbs, beaten egg whites (or 1 egg), 2 tablespoons of water, 1/4 teaspoon of salt, and 1/8 teaspoon of pepper. Mix the ingredients lightly but thoroughly.

Shape the mixture into 24 1-inch meatballs and place them on a rack in a broiler pan that has been sprayed with cooking spray.

Bake the meatballs in the preheated oven for 18 to 20 minutes or until they are cooked to an internal temperature of 160°F.

While the meatballs are baking, prepare the Apricot Dipping Sauce. In a medium saucepan over medium heat, combine 3/4 cup apricot preserves, 3/4 cup barbecue sauce, and 2 tablespoons of Dijon-style mustard. Bring the mixture to a boil, then reduce the heat and let it simmer, uncovered, for 3 to 5 minutes, stirring occasionally until the sauce slightly thickens.

Once the meatballs are cooked, add them to the sauce and continue to cook for an additional 2 to 3 minutes, stirring occasionally, until the meatballs are heated through.
