Coconut Banana Pie in a Jar

Coconut Banana Pie in a Jar

Easy desserts are the best and often times delicious. This recipe uses a modified corn starch like Ultra Gel to thicken the milk. If wanting to make chocolate pudding, add 1/2 cup cocoa powder to the recipe.

Ingredients

1/2 cup Ultra Gel
1/2 cup sugar
1 tsp salt
2 cups milk
1/2 tsp coconut extract
1/2 tsp almond extract
1 tsp banana extract
3 drops yellow food coloring
1 banana, peeled and sliced
1 cup whipping cream, whipped

Instructions

In a large bowl, whisk the Ultra Gel, sugar and salt together until fully blended.

Add the milk, extracts and food coloring to the bowl with the Ultra Gel mixture. Whisk the milk mixture for 1 minute to help thicken the pudding. Cover with plastic wrap and let the pudding sit for 15-20 minutes to let it thicken.

To assemble the coconut banana pie in a jar, using a pint size jar, spoon vanilla pudding into the bottom followed by 3-4 banana slices, whipped cream more pudding, banana slices and finis off with whipped cream and some banana slices. If desired, refrigerate for a couple of hours before serving but replace the top bananas with fresh banana slices making sure they haven’t turned brown. Enjoy!

If desired, use regular pudding just make sure it’s cooled before assembling.

    what is ultra gel and where can I buy it?…thinking it needs a little crunch..(that’s just me)..like a good crushed cookie of some sort on the bottom….
