Chocolate Lava Cake

Chocolate Lava Cake

If you make this cake in Home Ec. class, you may have failed the class. Fortunately, this partially baked cake is one of my favorite desserts. With it’s chocolatey “gooey” center, partially baked sides and top, paired with whipped cream or ice cream…delicious…need I say more?!

Ingredients

8 tbsp butter (1 stick)
1/2 cup semi-sweet chocolate
2 tsp vanilla
1/2 tsp salt
1 1/4 cups powdered sugar
3 eggs
3/4 cup flour

Instructions

Preheat your oven to 425 degree’s.

Spray 4 ramekins (8 ounce or 1/2 cup ramekins) with vegetable oil and set aside.

In a sauce pan, melt the butter and chocolate together. Remove from the heat and stir in the vanilla, salt, powdered sugar and flour until well mixed.

Transfer the batter to a large bowl and mix in the eggs until combine. Cover and refrigerate until ready to use.

Divide the cake batter between the prepared ramekins and place them on a baking sheet.

Bake the lava cakes for about 11-12 minutes or just until the sides and top have set and the center is still “gooey”.

Remove from the oven and let them cool for about 5 minutes.

Carefully invert them onto your dessert plates and serve with a dollop of whipped cream on top. If desired, add a scoop of ice cream to the side with s spoonful of your favorite berry jam. Serve and enjoy!

This cake batter can be made in advance, refrigerator and bake off as needed.
