Ingredients

1 pound hamburger
1 tomato, diced
1 cup mixed frozen veggies
1 cup chicken stock
1 tbsp onion powder
2 tsp garlic powder
1 tsp cumin
2 tsp chili powder
2 cups masa harina
1 - 1 1/2 cups water
2 Green Giant Fresh golden potatoes, diced and cooked
Salt and pepper to taste
Garnish like sour cream, salsa, guacamole, refried beans
Oil for frying

Instructions

Cook the ground beef and drain any excess grease. Add the mixed vegetables, diced tomato, and sauté for about 5 minutes.

Pour in the chicken stock and simmer until most of the liquid has evaporated, leaving the meat moist and flavorful.

In a bowl, mash the cooked potatoes. Add masa harina, water, and salt. Mix until well combined and the dough is not sticky.

Take a tennis ball-sized amount of dough and flatten it to about 1/3 inch thickness, shaping it into a round shape. Smooth the edges to avoid cracks.

Pan-fry the gorditas for 2-3 minutes on each side until they develop nice brown markings.

Finish the gorditas by deep frying them in oil until both sides turn golden brown. Drain on a paper towel-lined plate.

While still warm, slice the gorditas open like a pita pocket.

Fill the gorditas with the cooked hamburger mixture, and add garnishes such as sour cream, salsa, guacamole, refried beans, and finely chopped lettuce.
