Ingredients

4-5 small zucchini
1 1/2 cups cherry tomatoes
3-4 packed fresh basil leaves
6 garlic cloves
1/2 cup extra virgin olive oil
1/3 cup slivered almonds
1 cup shredded Parmesan cheese
1 package Rhodes Bake and Serve Loaves (3 loaves)
Salt and pepper to taste

Instructions

Begin by thawing and proofing the frozen Rhodes bread loaves. If you have frozen Rhodes rolls, those work perfectly too.

Preheat your oven to 400 degrees Fahrenheit.

Prepare the zucchini by transforming them into thick noodles using a spiralizer machine. Set the zucchini noodles aside.

To create the pesto, combine fresh basil, garlic cloves, olive oil, slivered almonds, and Parmesan cheese in your food processor. Pulse until everything is finely chopped. Add extra olive oil if necessary to achieve your desired consistency.

Roll out the dough into rounds, drizzle them with the freshly made pesto, and bake in the oven as you would with pizza. Remove them and set them aside until you're ready to use.

Bring a pot of water to a boil and blanch the zucchini noodles for about 30 seconds. Then, remove and drain them.

Heat a large sauté pan on the stove, add enough olive oil to lightly coat the pan, and toss in the blanched zucchini noodles. Add some pesto and toss to combine everything.
