Summer Corn Salad

Ingredients

4 ears of corn, corn kernels removed
3 roma tomatoes, diced
1 cucumber, peeled and chopped
1 pickled green chili, chopped
1 ripe avocado
1 bunch fresh parsley, chopped
1/4 cup freshly chopped basil
1/4 cup olive oil
Juice from one lemon
1 tbsp red wine vinegar
2-3 cloves of garlic, minced

Begin by preparing the corn. Remove the husks and silk from the ears of corn. Boil the corn and let it cool. Once cooled, grill the cooked corn slightly to give it a charred flavor. Hold each ear of corn upright on a cutting board and, using a sharp knife, cut downwards to remove the kernels. Repeat this process for all four ears of corn. Place the corn kernels in a bowl and set aside.

Now, let's prepare the remaining vegetables. Dice the roma tomatoes and place them in a separate bowl. Peel the cucumber and chop it into small pieces, then add it to the bowl with the tomatoes. Chop the pickled green chili and set it aside.

Moving on to the avocado. Slice it in half, remove the pit, and scoop out the flesh. Cut the avocado into small chunks and set them aside.

In a large mixing bowl, combine the corn kernels, diced tomatoes, chopped cucumber, pickled green chili, and chopped avocado.
