Spicy Chicken Tortilla Salad

Spicy Chicken Tortilla Salad

This spicy chicken tortilla salad can easily be made on the grill or on a baking stone in the oven. Be creative with your salad and have fun creating this amazing dish for your family or friends.

Ingredients

6 flour tortillas
3 cups chopped cooked chicken
1/2 cup prepared salsa
1/2 cup prepared pizza sauce
12 cups chopped salad greens
1 small red onions, thinly sliced
1/3 cup extra virgin olive oil
juice and zest from 2 limes
salt and pepper to taste

Instructions

Preheat your baking stone and oven to 450 degreeā€™s.

In a small bowl, mix the prepared salsa and pizza sauce together. Set aside until ready to use.

If using fresh tortillas, roll the dough out on a well floured work surface to paper thin.

Flour your pizza peel and place the freshly rolled out or prepared tortilla on the pizza peel.

Spoon about 1/4 cup of the sauce mixture onto the tortilla. Evenly spread the sauce around the tortilla.

Spread 1/2 cup of the chopped cooked chicken on the tortilla and place it in the oven to crisp up (about 5 minutes).

While the tortillas are cooking/crisping up in the oven, toss the salad greens and red onion together. If desired, you can add anything to the greens.

In a separate bowl, whisk the extra virgin olive oil, juice and zest from the limes together. Salt and pepper to taste.

Toss the salad greens in the vinaigrette and when the spicy chicken tortilla comes out the oven top with a handful of prepared salad. Continue until 6 spicy chicken tortilla salads are created. Enjoy!
