Simple Orange Chicken

Ingredients

2-3 boneless, skinless chicken breasts, cut into 1/2 inch pieces
2 tbsp cornstarch
1 tbsp water
1/2 large egg, beaten
Salt and pepper to taste
For the Coating: 1/4 self rising flour
1/4 cup water
1/2 large egg, beaten
1 tbsp oil
For the Orange Sauce: 3/4 cup orange juice
1 tbsp oyster sauce
2 tsp cornstarch
Salt, to taste (optional)

Instructions

In a bowl, mix the chicken pieces, cornstarch, water, half of the beaten egg, salt, and pepper until well combined.

In another bowl, whisk together the coating ingredients (self-rising flour, water, half of the beaten egg, and oil) until smooth. Adjust consistency with additional water if needed.

Heat 4-5 inches of oil in a deep pot or wok to 350°F.

Dip the chicken pieces in the coating mixture and fry in the hot oil until crispy and golden brown. You can double fry them for extra crispiness.

In a separate pan, heat a small amount of oil over medium heat. Add the orange juice, oyster sauce, cornstarch, and salt (if desired) to the pan. Cook, stirring constantly, until the sauce thickens.

Add the fried chicken pieces to the orange sauce and toss to coat.

Serve the orange chicken with rice and your favorite sides.
