Sesame Ginger Garlic Chicken Stir Fry Recipe

Ingredients

4-6 chicken breasts/thighs, cubed
1 tbsp toasted sesame seed oil
1-2 tbsp season salt
1/4 cup cornstarch
1 small onion, sliced
1 inch fresh ginger, peeled and chopped
4-5 garlic cloves, chopped
4-5 sweet chili peppers, sliced
1 1/2 cups diced eggplant
2 cups bean sprouts
4-5 stalks green onions
1 pkg egg chow mein noodles, cooked and set aside
Oil for deep frying
For the Sauce: 1/4 cup soy sauce
1/4 cup oyster sauce
1 tbsp toasted sesame seed oil
1/4 cup red pepper chili pepper jam
1 tbsp black bean paste
1 tbsp cornstarch

Instructions

Heat your oil for deep frying to 350 degrees.

In a large bowl, combine cubed chicken, toasted sesame seed oil, season salt, and cornstarch. Mix thoroughly.

Deep fry the prepared chicken pieces until they turn golden brown and are fully cooked.

Heat a large fry pan or wok on the stove, adding enough oil to coat the bottom lightly.

In a separate bowl, combine the sauce ingredients (soy sauce, oyster sauce, toasted sesame seed oil, red pepper chili pepper jam, black bean paste, and cornstarch). Set this sauce aside.

Add the prepared vegetables to the hot fry pan or wok and stir fry for about 3 minutes. Add as much chicken as desired and freeze the remaining for a future meal.

Re-mix the sauce and pour it over the vegetables and chicken. Stir well to ensure the sauce thickens and coats the ingredients.
