Ingredients

1 leg of lamb (about 5 pounds)
8 cloves of garlic, peeled and sliced
1/2 cup of olive oil
1/2 cup of lemon juice
2 tablespoons of dried oregano
1 tablespoon of salt
1 teaspoon of black pepper
2 pounds of potatoes, peeled and quartered
1 cup of water
Fresh rosemary sprigs for garnish

Instructions

Begin by preheating your oven to 325°F (165°C).

Take your leg of lamb and make small incisions all over it with a sharp knife. In each of these incisions, insert a slice of garlic.

In a small bowl, mix together the olive oil, lemon juice, oregano, salt, and pepper. Ensure that this aromatic mixture is thoroughly rubbed all over the lamb, paying extra attention to the incisions.

Place your prepared lamb in a roasting pan, and arrange the quartered potatoes around it.

Pour a cup of water into the bottom of the pan, which will help keep everything tender and juicy.

Cover the roasting pan with aluminum foil and let it roast in your preheated oven for approximately 2.5 hours. Keep an eye on the internal temperature of the lamb using a meat thermometer. Aim for 145°F (63°C) for medium-rare, 160°F (71°C) for medium, or 170°F (77°C) for well-done.

Once the lamb reaches your desired level of doneness, remove it from the oven and allow it to rest for about 15 minutes. This rest period is essential as it allows the juices to evenly distribute throughout the meat, ensuring a succulent and flavorful experience.
