Ingredients

3 cups shredded beef Pot Roast (approximately 24 ounces)
16 ounces whole wheat or regular refrigerated pizza dough
2 cups shredded Cheddar cheese (divided)
2/3 cup diced sweet onion
1 egg white (lightly beaten)
1/2 cup light dairy sour cream

Begin by preheating your oven to 375°F (190°C).

On a lightly floured surface, roll out the pizza dough into a 12 by 19-inch rectangle. Then, cut it into 8 rectangles, each measuring 4 by 5-1/2 inches.

In a large bowl, combine the shredded beef, 1-1/2 cups of Cheddar cheese, and diced sweet onion. Mix these ingredients thoroughly.

Divide the beef mixture into eighths and press each portion to compact it. Place each portion lengthwise in the center of the dough rectangles.

Fold the long sides of each rectangle over the beef mixture, pressing firmly to seal the edges. Arrange the filled pockets on an ungreased shallow-rimmed baking sheet.

Brush the tops of the pockets with the beaten egg white. Then, sprinkle the remaining 1/2 cup of Cheddar cheese evenly over the tops of the pockets.
