Ingredients

8 cups seedless watermelon, cubed
2-3 cucumbers, peeled and diced
3-4 celery stalks, chopped
1/3 cup finely chopped fresh mint
1 small onion, thinly sliced
1 cup chopped and pitted kalamata olives
2 cups cubed Swiss cheese
1/3 cup olive oil
1/4 cup fresh lemon/lime juice
Salt and pepper to taste

Instructions
