Pizza from the Fridge

Pizza From the Fridge

Learning how to re-purpose leftovers into another meal is an important part of the kitchen. I’m using dough as the flavor medium to carry the flavors of the leftovers into another delicious meal.

Ingredients

4 cups water
1 tbsp yeast
5-6 cups bread flour
2 tsp salt
1/2 cup extra virgin olive oil
Leftovers like: meat, vegetables, cheese, sauces, relishes…
Salt and pepper to taste

Instructions

To make the dough, add all of the ingredients into the bowl of your mixer and mix for 10-15 minutes or until the dough is smooth. If needed adjust the water or flour to create a soft dough.

Remove the dough and place it into a large bowl your have sprayed with vegetable oil. Spray the dough with vegetable oil so it won’t dry out while rising. Lightly cover the dough and let it rise for 2 hours or until doubled.

Once the dough has risen, divide it according to how many pizzas/flatbreads you want to create.

Preheat your oven and pizza stone to 400 degree’s.

Working on a floured work surface, flatten the dough into the desired shape you want about 1/4 inch thick.

Build the pizza/flatbread with whatever leftovers you have, sauces, cheese, left over meat, vegetables. Brush the edges of the dough with olive oil and place it into your preheated oven and directly on top of the preheated pizza stone.

Bake for about 10 minutes or until the crust is golden and the cheese is bubbling.

Remove from the oven and repeat until leftovers have been used up. Enjoy!
