Ingredients

For the Salad: 2 cans chickpeas, drained and rinsed
2 medium size cucumbers, peeled and diced
2 roasted red bell peppers
4-5 green onions, chopped
2-3 roma tomatoes, diced
1/2 -1 cup chopped kalamata olives
1 bunch fresh parsley, chopped
2 tbsps freshly chopped mint leaves
3 peperoncini peppers, chopped
1/4 cup olive oil
Juice from one lemon
1 garlic clove, minced
1 tsp dried oregano
Salt and pepper taste
For the Slushy: 3-4 lemons, peeled
2-3 limes, peeled
2 cups water
1/2 cup sugar or to taste
1/2 cup packed mint leaves
2-3 cups ice

Instructions

In a large mixing bowl, combine the drained and rinsed chickpeas, diced cucumbers, roasted red bell peppers, chopped green onions, diced roma tomatoes, chopped kalamata olives, chopped fresh parsley, freshly chopped mint leaves, and chopped peperoncini peppers.

In a separate small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Adjust the seasoning to taste.

Pour the dressing over the chickpea salad and toss gently to ensure all the ingredients are coated evenly. Allow the salad to marinate in the refrigerator for at least 30 minutes to let the flavors meld together.

While the salad is marinating, prepare the minty lemon lime slushy. In a blender, combine the peeled lemons, peeled limes, water, sugar, packed mint leaves, and ice. Blend until smooth and slushy in consistency.
