Ingredients

2 (12-ounce) boneless ribeye steaks, 1 inch thick
2 tablespoons chopped fresh cilantro, divided
2 teaspoons ground cumin
1/4 to 1/2 teaspoon ground red pepper
4 (1/2-inch thick) fresh pineapple slices
1 medium red bell pepper, halved lengthwise
1 medium lime

Instructions

Combine 2 tablespoons cilantro, cumin, and ground red pepper in a small bowl. Press the mixture evenly onto the steaks.

Heat a grill to medium heat. Grill the steaks, covered, for 10 to 14 minutes for medium rare (145°F) to medium (160°F) doneness, turning occasionally.

Grill the pineapple slices for 8 minutes or until heated through, turning once. Grill the bell pepper halves for 6 to 8 minutes or until tender, turning occasionally.

Meanwhile, grate the zest and juice of the lime. Set aside.

Chop the pineapple and bell pepper into 1-inch pieces. In a medium bowl, combine the remaining 1 tablespoon cilantro, lime zest, lime juice, pineapple, and bell pepper. Season with salt to taste.
