Ingredients

1 pound shrimp, peeled and deveined
1/4 cup Old Bay Seasoning
1/4 cup mayonnaise
1 tablespoon lemon juice or lime juice
4 green onions, chopped
1 tablespoon chopped fresh parsley
1 tsp season salt or Old Bay Seasoning
Salt and pepper to taste
4 buns
Lettuce leaves
Sliced tomatoes
Sliced cucumbers (optional)
Sliced avocado (optional)

Instructions

Boil a pot of water with Old Bay Seasoning and add shrimp. Cook for 2-3 minutes until shrimp turn pink and opaque. Drain and let cool.

In a bowl, mix mayonnaise, lemon/lime juice, green onions, parsley, and seasoning. Combine well.

Chop the cooked shrimp into bite-sized pieces and evenly coat with the mayo mixture.

Toast buns until lightly golden.

Place lettuce leaves on the bottom of each bun and spoon the shrimp mixture on top.

Add sliced tomatoes, cucumbers, and avocado (if desired) on top of the shrimp mixture.
