Hickory Smoked Pulled Pork Sandwiches with Coleslaw

Ingredients

1 bone in pork shoulder
1/4 cup favorite pork seasoning blend
4 cups shredded cabbage
1 cup shredded carrot
1/2 cup mayonnaise
1/4 cup sugar
2-3 tsp salt
1 tbsp black pepper
1 tbsp celery seeds
1/4 cup apple cider vinegar

Instructions

Preheat your smoker or oven to 225 degrees F.

Season the pork shoulder all over with the pork seasoning blend.

Place the pork shoulder in the smoker and smoke for 6-8 hours, or until the internal temperature reaches 195 degrees F.

Remove the pork shoulder from the smoker and let it rest for 30 minutes.

While the pork shoulder is resting, make the coleslaw. In a large bowl, combine the cabbage, carrot, mayonnaise, sugar, salt, pepper, celery seeds, and apple cider vinegar. Toss to coat.

Shred the pork shoulder using two forks.
