Garden Fresh Tomato Soup with Grilled Ham and Cheese Sandwiches

This is my perfect lunch/dinner. I love freshly made tomato soup with a grilled sandwich to dip into it. Making fresh tomato soup is actually so easy to do and a great way to use up tomatoes from the garden.

Ingredients

8-10 roma tomatoes, quartered
2-3 chicken bullion cubes
1 large shallot
3-4 garlic cloves
1 1/2 cup heavy cream
2 tbsp flour
Bread
Ham Slices
Cheese Slices
Butter
Salt and pepper to taste
Fresh Basil for garnish

Instructions

Place the tomatoes, chicken bullion cubes, shallot and the garlic cloves to your blender and puree until completely blended.

Pour the blended sauce into the a sauce pan, bring to a boil, reduce heat and simmer for at least 10 minutes reducing the tomato sauce by about 25% .

Whisk the cream and flour together and stir it into the the soup.Continue simmering to thicken the soup, adjust salt and pepper to taste.

Thinly slice the fresh basil and top the tomato soup with a bit of butter and the freshly sliced basil.

Make a ham and cheese sandwich and grill it in a pan, serve with your freshly made tomato soup and enjoy.
