Packed with protein-rich pinto beans and a medley of fresh vegetables, this salad is bursting with flavors. It’s quick to make and perfect for a summer barbecue, potluck, or a simple weeknight dinner. Let’s dive into this delicious and satisfying salad!

Ingredients

2 cups cooked pinto beans
1 large tomato, diced
1/2 red onion, finely chopped
1/2 green bell pepper, finely chopped
1/2 red bell pepper, finely chopped
1 garlic clove, finely chopped
2 cups sautéed mushrooms
1/4 cup fresh cilantro, chopped
2 tablespoons olive oil
Salt and pepper to taste

Instructions

1
In a large bowl, combine the cooked pinto beans, diced tomato, finely chopped red onion, green bell pepper, red bell pepper, and garlic.
2
In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
3
Pour the dressing over the bean salad and toss gently to coat all the ingredients.
4
Sprinkle the fresh cilantro over the salad and give it a final toss.
5
Let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.
6
Serve the pinto bean salad as a side dish or a light main course. I like serving it with cheese quesadillas and chips. Enjoy!
