Delicious Coconut Shrimp Recipe – Easy and Crispy

Ingredients

1 pound (450g) large shrimp, peeled and deveined, tail-on
1 cup shredded coconut (unsweetened)
1 cup panko bread crumbs
1/2 cup all-purpose flour
2 eggs
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
Vegetable oil, for frying
Sweet chili sauce or your preferred dipping sauce, for serving

Instructions

In a shallow bowl, combine the shredded coconut, bread crumbs, salt, pepper, and paprika. Set aside.

Place the flour in a separate shallow bowl. In another bowl, beat the eggs.

Take a shrimp and dip it into the flour, shaking off any excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the shrimp in the coconut and bread crumb mixture, pressing gently to adhere. Place the coated shrimp on a baking sheet or plate, and repeat with the remaining shrimp.

Heat vegetable oil in a deep skillet or deep-fryer to around 350°F (175°C).

Carefully place a few shrimp into the hot oil, making sure not to overcrowd the pan. Fry the shrimp for about 2-3 minutes per side or until golden brown and crispy. Use a slotted spoon or tongs to remove the shrimp from the oil and transfer them to a paper towel-lined plate to drain excess oil. Repeat with the remaining shrimp.

Serve the coconut shrimp hot with sweet chili sauce or your favorite dipping sauce and sides.
