Corn Chowder

Corn Chowder

This recipe is actually my grandmothers. I grew up enjoying this delicious corn chowder many times when visiting grandma. However you look at it, this recipe is a winner for dinner anytime of the week!

Ingredients

8-10 strips bacon
1 cup minced onion
1/2 cup chopped carrot
1/2 cup chopped celery
2 tbsp flour
4 cups chicken stock
3 cups diced potatoes
2 cans cream style corn
2 cans corn, liquid too
1 can evaporated milk
Salt and pepper to taste

Instructions

In a large pot cook the bacon. Once cooked, remove and chop.

To the pot, add the chopped bacon, minced onion, chopped carrot and celery. Saute everything together until fragrant (about 3 minutes).

Add the flour and mix together.

Add the chicken stock and diced potatoes. Stir everything together and simmer for about 5 minutes or until the potatoes, carrots and celery are tender.

Add the two can cans corn and 2 cans of cream style corn and the can of evaporated milk. Stir to incorporate.

Serve with cheesy bread for dipping and enjoy!
