Classic French Onion Soup

Classic French Onion Soup

This classic soup is truly a favorite at my house. Rich, satisfying and really easy to make, this soup will be a dinner favorite.

Ingredients

1 stick butter ( 8 tbsps )
8-10 medium onions, peeled and sliced
8 cups beef stock
3 sprigs thyme
3 sprigs rosemary
2-3 bay leaves
1 baguette, sliced
4 cups shredded comté cheese

Instructions

Heat a large stock pot and melt the butter. Add the sliced onions to the pot and on medium or medium low heat, caramelize the onions (this will take 30-45 minutes be patient).

Once the onions are caramelized, add the beef stock, thyme, rosemary and bay leaves bringing soup to a simmer and continue cooking for another 30 minutes. Remove the the sprigs and bay leaves from the soup. Remove from the heat.

Place 2-3 slices of the baguette in the bottom of the bowl and paddle some of the french onion soup into the bowl, top with a few more slices and finish with shredded cheese.

Place the French onion soup under the broiler to melt the cheese. Make sure the bowl is oven safe, once the cheese is melted, remove from under the broiler and serve.
