Ingredients

1 pound beef chuck roast
2 chipotle peppers in adobo sauce, minced
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon lime juice
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
Salt and pepper, to taste
8 small flour or corn tortillas
Toppings: Chopped fresh cilantro, Diced tomatoes, Finely shredded lettuce, Sliced avocado, Crumbled queso fresco, Lime wedges

Instructions

In a bowl, combine the minced chipotle peppers, minced garlic, olive oil, lime juice, cumin, smoked paprika, dried oregano, salt, and pepper. Mix well to form a marinade.

Place the beef chuck roast in a shallow dish and pour the marinade over it, making sure to coat the meat evenly. Cover the dish and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.

Preheat your grill or stovetop grill pan over medium-high heat. Remove the beef from the marinade and discard any excess marinade.

Grill the beef for about 4-5 minutes per side, or until it reaches your desired level of doneness. Remove the beef from the grill and let it rest for a few minutes before slicing it into thin strips.

Warm the tortillas on the grill or in a dry skillet until pliable and lightly toasted.
