Chicken Karaage with Coleslaw and Fruit Salad

Chicken Karaage with Coleslaw and Fruit Salad

Fried chicken is a favorite of mine regardless of culture it comes from. I create my version of a chicken karaage with an amazing coleslaw and fruit salad I’m sure you are going to love!

Ingredients

For the Chicken Karaage: 3 chicken breasts, cut into 1/2 in cubes
1/4 cup seasoning sauce (Brand name is Golden Mountain)
1/3 cup cornstarch
2 eggs, whisked
2 cups bread crumbs (I used Panko)
For the Coleslaw: 1/2 cabbage head, shredded
3 sweet peppers, thinly sliced
1 small onion, thinly sliced
1/2 cup Brazilian chimichurri sauce
For the Apple and Orange Salad: 3 apples, cored and sliced
2 oranges, segments only

Instructions

To make the Chicken Karaage, combine the chicken pieces, seasoning sauce and cornstarch together. Mix everything together to combine. Let the mixture rest for 20-30 minutes.

In a small bowl, whisk the eggs together (salt and pepper the eggs) and dip the marinaded chicken pieces into the egg and dredge in the bread crumbs.

Deep fry the chicken pieces until they are golden brown and the chicken is fully cooked through. Adjust cooking times as needed.

To make the coleslaw, add all of the ingredients into a large bowl and carefully fold everything together to combine. Set aside (refrigerate until ready to use).

To make the apple and orange salad, combine the apple and orange segments into a large bowl. Squeeze the orange core to remove any juice over the apples to help prevent them from turning brown.

Toss the apple slices and oranges to combine.

Serve the chicken karaage with the coleslaw, apple and orange salad. Enjoy!
