Chicken Fettuccine Alfredo, Green Salad and Garlic Bread

This fettuccine recipe is to die for! Deliciously served with pan seared chicken breasts, garlic bread and a fresh green salad will make this a dinner time favorite. I like to make fresh fettuccine noodles when I make this dish, however, you can easily use packaged noodles.

Ingredients

For the Chicken Fettuccine Alfredo: 2 large chicken breasts, butterflied in half
1 pound fresh fettuccine noodles
2 tbsp minced garlic
3 cups heavy cream
2 cups shredded parmesan cheese
Favorite Chicken Seasoning
Olive Oil
For the Garlic Bread: 1 package Rhodes Warm and Serve French Artisan Rolls
1 stick butter, room temperature
Granulated Garlic
Italian Herb Blend
Vegetable Oil Spray
For the Green Salad: 1/2 head iceberg lettuce, chopped
1 1/2 cup large black olive
2 cups grape tomatoes
1/2 cup grated parmesan cheese
1/3 cup Italian dressing

Instructions

To make the Chicken Fettuccine Alfredo: Season and pan sear the chicken breasts in a large fry pan until they are fully cooked through (165 degree’s internally). If needed, add the chicken breasts to the oven to finish cooking them.

While the chicken is cooking, cook the fettuccine noodles, strain and set aside.

Once the chicken is cooked through, remove from the pan and lightly drizzle the pan with olive oil. Add the minced garlic to the pan sauté for about 30 seconds.

Pour the heavy cream into fry pan and add the parmesan cheese. Lightly stir until the sauce has reduced sufficiently to produce a trail (you can easily see the bottom of the pan) along the pan bottom when lightly stirred. Gently stir in the cooked fettuccine noodles and set aside.

To make the Garlic Bread: Make sure the rolls are thawed out and cut 6-8 rolls in half. Spread butter over the roll halves and sprinkle with granulated garlic and an Italian herb blend. Lightly spray roll halves with vegetable spray, making sure the dried herbs have a lightly coating of oil over them.

Place the garlic bread under the broiler for about 3 minutes or until slightly browned. Remove and set aside.

To assemble the Green Salad: In a large bowl, add the chopped lettuce, large black olives, grape tomatoes and shredded parmesan cheese. Toss everything together to combine. When ready to serve, dress the salad with your favorite Italian dressing.

Serve the cooked chicken breasts with the fettuccine alfredo, garlic bread and green salad. Enjoy!
