Caprese Chicken Panini

Indulge in the delightful flavors of Chef Bryan Woolley’s Caprese Chicken Panini. Made with grilled chicken, melted mozzarella cheese, juicy tomatoes, and aromatic basil, this flavor-packed panini is a perfect combination of textures and tastes. Follow the easy directions below to create a satisfying lunch that will have you coming back for seconds.

Ingredients

2 boneless, skinless chicken breasts
4 slices of mozzarella cheese
4 slices of tomato
Fresh basil leaves
4 slices of bread (ciabatta or sourdough work well)
Olive oil
Salt and pepper to taste
Balsamic glaze (optional)

Instructions

Season the chicken breasts with salt and pepper. Heat a grill pan or skillet over medium heat and cook the chicken for about 6-8 minutes per side, until fully cooked and the internal temperature is 165 degrees. Remove from heat and let it rest for a few minutes.

Slice the cooked chicken breasts into thin slices.

Preheat a panini press or grill pan.

Take two slices of bread and brush one side of each slice with olive oil. Place one slice of bread, oiled side down, on a clean surface.

Layer the sliced chicken, mozzarella cheese, tomato slices, and fresh basil leaves on top of the bread slice. Drizzle with balsamic glaze if desired.

Top with the second slice of bread, oiled side up.

Place the sandwich in the preheated panini press or grill pan. If using a grill pan, place a heavy pan or foil-wrapped brick on top of the sandwich to press it down.

Cook for 3-4 minutes, or until the bread is toasted and the cheese is melted.

Remove the sandwich from the panini press or grill pan. Let it cool for a minute, then slice it in half.
