Blecs (Italian Pasta)

While visiting the northern part of Italia, I fell in love with this pasta. Good home cooking best describes blecs made with corn flour and flour. Toss this pasta with your favorite sauce, pop open your favorite bottle of wine and enjoy!

Ingredients

3/4 cup flour
3/4 cup corn flour (see below)
2 eggs
1 tsp salt
4 bacon strips, chopped
2 tbsp butter
2 carrots, diced
2 celery stalks, diced
1 small onion, diced
1 tbsp minced garlic
2 cups marinara sauce
2 tbsp Italian seasoning
Parmesan cheese, shredded or crumbled

Instructions

To make the pasta, in a large bowl, combine the flour and the corn flour into a large bowl. To make the corn flour, take some corn meal and put it in your blender (about 1/4 cup at a time) and puree it into flour.

Add the eggs and salt to the flour mixture and mix together. Dough may be a little dry, but keep working it till it comes together. Once mixed together, cover and let it sit and rest for about 15 minutes.

While the pasta is resting, add the butter and bacon to a large sauté pan rendering (cooking it down) the bacon down for about 2 minutes.

Add the diced carrots, celery, onion, and garlic to the sauté pan. Sauté for about 2 minutes and add the marinara sauce and Italian seasoning. Bring to a boil and than remove from the heat and set aside.

Roll the pasta out to about 1/8 inch thick and cut into random bite size pieces. The beauty of this pasta is the random shapes and so have some fun cutting it.

Bring a large pot of water to a boil and add the cut pasta pieces to the boiling water. Cook the pasta for about 8 minutes or until it’s tender. Depending on the thickness of your pasta will determine the length of cooking the pasta, adjust cooking times as needed.

When the pasta is cooked, remove with a large strainer and transfer the cooked pasta to the sauce. Gently fold everything together and divided between four plates. Sprinkle with shredded or crumbled parmesan cheese, serve and enjoy!
