Old Fashioned Vanilla Custard Icecream

Old Fashioned Vanilla Custard Ice Cream

I love homemade ice cream and this vanilla custard is the perfect ice cream base for summer goodness. I like to serve it up with my homemade hot fudge sauce or my homemade caramel sauce.

Ingredients

1 3/4 cups sugar
2 tbsp cornstarch
1/2 tsp salt
8 cups whole milk
2 cups heavy cream
1 tbsp vanilla
5 eggs

Instructions

In a large sauce pan, add the sugar, cornstarch and salt; whisking everything together to combine.

Add the whole milk, heavy cream and the vanilla to the pan and stir to combine everything.

In a separate bowl, whisk the eggs together and set aside.

Bring the cream mixture to a bowl, then using a measuring cup, add about 4 cups of the hot cream mixture to the eggs while whisking.

Return the egg mixture back to the sauce pan and while stirring, continue cooking until it thickens up and easily coats the back of a spoon.

Remove from the heat, strain through a fine mesh strainer to catch any cooked egg pieces and refrigerate overnight to cool the ice cream base. Be sure to place some plastic wrap on top of the custard to prevent any film from forming on the top.

Transfer the chilled ice cream base to your ice cream maker, follow the manufactures direction for freezing. Once the ice cream is done, freeze in your freezer for several hours to firm it up. Serve with your favorite toppings and enjoy!
