Thai Peanut Noodles
Delicious food doesn’t need to be a production. This simple noodle dish is delicious and easy to put together for a quicker dinner for family and friends.
Ingredients
1 pkg fettuccine noodles (1 pound)
1 small red bell pepper, chopped
4 garlic cloves, minced
1 small onion, sliced
3 small carrots, peeled and sliced
1 bunch green onions, chopped (reserve 1/2 cup)
1/4 cup honey
1/3 cup soy sauce
1 cup roasted peanuts
1/4 cup toasted sesame seeds
1/2 cup creamy peanut butter
Vegetable oil
Instructions

Cook the fettuccine noodles as directed on the package. Once cooked, rinse and set aside.

Heart a large sauté pan on the stove and add enough oil to lightly coat the bottom of the pan.

Add the chopped bell pepper, minced garlic, sliced onion, sliced carrots and chopped green onions (except for about 1/2 cup for garnish).

Sauté all of the vegetables for about 2 minutes.

To the vegetables add the honey, soy sauce, roasted peanuts, toasted sesame seeds and the creamy peanut butter. Stir to incorporate everything.

Add the cooked noodles to the vegetable mixture, stirring to incorporate everything together.

Serve the noodles family style on a large platter, sprinkle with the reserved chopped green onions and enjoy!
