Sourdough Zucchini Bread
I love zucchini bread and got thinking one day to create a sourdough version of this delicious bread. I hope you enjoy the recipe as much as I did! I served it with homemade apple jelly and whipped cream cheese. Here’s the link for my sourdough banana bread and my sourdough starter.
Ingredients
2 cups shredded zucchini
3 eggs
1 tbsp vanilla
1/4 cup vegetable oil
1 cup sourdough start
1 tsp salt
1/4 tsp baking soda
2 tsp baking powder
2 tbsp cinnamon
2 cups sugar
2 cups flour
1 cup chopped nuts (optional)

Preheat oven to 350 degree’s.

Spray 2 bread pans with vegetable spray and set aside until read to use.

In one bowl combine the the shredded zucchini, eggs, vanilla, vegetable oil and sourdough start. Mix together until fully combined.

In a separate bowl, add the salt, baking soda, baking powder, cinnamon, sugar and flour. Use a whisk to combine all dry ingredients together.

Add the dry to the wet ingredients. Using a large spoon, mix all the ingredients together until combined. If using nuts, fold them into the batter.

Divide and transfer the zucchini bread batter to the prepared bread pans and bake in the oven for approximately 45 - 60 minutes or until fully baked. I use a simple toothpick method to determine if the bread is fully baked or not. Adjust time as needed.

When baked, remove from the oven and let the bread cool completely in the bread pan before removing. Serve and Enjoy!
