Pork and Green Onion Tacos

Pork and Green Onion Tacos

These delicious pork and green onion tacos are a great idea for dinner. Grill up the pork loins and serve with spinach, grilled green onions and more for a colorful and wonderful dinner! This  recipe is inspired from a from the American Heart Association.

Ingredients

1 tsp smoked paprika
1 tsp chipotle pepper powder
1 tsp garlic salt
4 boneless pork chops, 1/2 inch thick
1/2 cup sour cream
1/4 cup freshly chopped cilantro
1 tbsp fresh lime juice
8 green onions
2 cups loosely pack spinach leaves
1 medium tomato, cut into 8 wedges
1 small lime, cut into 4 wedges
8 corn tortillas

Instructions

In a small bowl mix the smoked paprika, chipotle pepper powder and garlic salt until they are combined.

Sprinkle the boneless pork chops with the season mix on both sides. Heat a large stove top grill, pan or outdoor grill and cook off the pork chops until they are fully cooked to 145 degree’s internally.

Grill off the green onions for a couple of minutes on each side. Remove from the grill and set aside.

Remove the pork chops from the grill and set aside until ready to use.

In a small bowl, mix the sour cream, chopped cilantro and fresh lime juice all together and set aside.

Grill the corn tortillas to warm them up.

To assemble your pork and green onion tacos, chop the green onions into 1 inch pieces and layer the tortillas with spinach, green onions, chopped pork loin, tomato slices. Finish with a dollop of the sour cream mixture and serve with a wedge of fresh lime on the side. Enjoy!
