Minestrone Soup with Garlic Rolls and Salad
This delicious minestrone soup is seriously the easiest soup in the world to make. I love making my garlic rolls to serve on the side along with a green salad. Perfect idea for dinner!
Ingredients
1 small zucchini, sliced
3 carrots, sliced
3 celery stalks, sliced
1 medium onion, chopped
6-8 cloves of garlic, smashed
1 can diced tomatoes, 14 oz can
1 can tomato paste, 6 oz can
1 can kidney beans, 15 oz can approx.
1 can white beans, 15 oz can approx.
1 can cut green beans, 15 oz can approx.
4 cups vegetable stock
1 cup pasta, your choice
2 tbsp Italian seasoning
2 tbsp dried parsley
Salt and pepper to taste
Olive oil
Prepared green salad
1 pkg Rhodes Texas rolls
Prepared Italian dressing
Instructions

Thaw, proof and brush the rolls with prepared Italian dressing, bake in a 350 degree oven until golden brown. If desired when you remove the rolls from the oven brush once more with Italian dressing. Set aside and let cool.

Heat a large pot on the stove and add enough olive oil to lightly coat the bottom of the pot.

Add and sauté the onions, zucchini, carrots and celery together until fragrant. Add in the beans liquid and all to the pot.

Add the diced tomatoes, tomato paste, dried parsley and vegetable stock to the pot. Simmer for 10 minutes.

Add the pasta and continue cooking until pasta is cooked. Taste and adjust salt and pepper.

Serve with green salad and the garlic rolls on the side.
