Ham and Cheese Potato Croquettes

Ham and Cheese Potato Croquettes

Whenever I have leftover potatoes, I love to make potato croquettes. This recipe has shredded cheese and ham in it, however, you can add anything you’d like to your croquettes.

Ingredients

4 russet potatoes
1 cup shredded cheese
1 cup finely cubed ham
2 cups flour
2-3 eggs
3-4 cups Panko bread crumbs
Salt and pepper to taste
Vegetable oil for frying

Instructions

Either bake and peel the Russet potatoes or peel, cube and boil the potatoes until they are tender. Mash the potatoes and let them cool off.

To the cooled mashed potatoes, add the shredded cheese and cubed ham. Add salt and pepper to taste.

Heat about 4-6 inches of oil to 350 degree’s.

In 3 large bowls, add the flour to one bowl, eggs (whisk them together) to another and the Panko bread crumbs to the third bowl.

Mix the mashed potato mixture together until well blended. Shape into small patties that resemble “hash brown” patties.

Dredge the freshly made croquettes in the flour, dip in the eggs and coat with the Panko bread crumbs. Deep fry until they are golden brown.

Serve the croquettes with your favorite sides, I like to serve finely shredded cabbage (dressed with a ginger dressing) and sliced tomatoes with my croquettes. Enjoy!
