Garden Vegetable Stir Fry with Chicken
This wonderful stir is easy and simple to make. The chicken is optional and can be omitted for a vegetarian version that’s just as delicious. Use your garden fresh vegetables to create this perfect idea for dinner.
Ingredients
2 chicken breasts, thinly sliced
2 tbsp cornstarch
3 cups snipped green beans
3 carrots, peeled and sliced
1 bunch green onions
1 small zucchini sliced
2 tbsp freshly chopped ginger
1 tbsp minced ginger
1/2 cup chicken stock
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp cornstarch
vegetable oil
salt and pepper to taste

In a large bowl add the thinly sliced chicken, 2 tbsp cornstarch and soy sauce. Mix together and let it sit for 30 minutes.

Bring a pot of water to boil and boil the chicken until fully cooked, strain and set aside. You could also fry the chicken if you choose until cooked.

In a large pan, add enough vegetable oil to lightly coat the bottom of the pan an d add the green beans and carrots sautéing for a couple of minutes. Add the green onions, zucchini , ginger, minced ginger and the cooked chicken sautéing for about 5 minutes to finish cooking everything through.

In a small bowl mix the chicken stock, soy sauce, oyster sauce and cornstarch together until combined.

Pour the sauce into the stir fry, mix to let it thicken and coat the stir fry. Serve over rice.
