
Fall Harvest Salad
This Fall Harvest Salad combines so many non-traditional salad ingredients to make an amazing salad. Both hardy and fresh, this salad can be served for lunch, dinner or a side to complete any meal.

Ingredients
2 cups green beans, cooked and chopped
2 cups grapes, sliced in half
2 cups cherry tomatoes, sliced in half
2 carrots, peeled and sliced
1 peach, peeled and chopped
1 mango, peeled and chopped
1 cup chopped Italian parsley
Juice and zest from one lemon
1/4 cup extra virgin olive oil
Salt to taste
Instructions

Combine all ingredients into a large and carefully mix to combine. If you haven’t already, squeeze the fresh lemon juice over the salad and drizzle with extra virgin olive oil.

Carefully fold the salad together coated it with the lemon juice and extra virgin olive oil.

Cover and chill if desired or serve and enjoy right away. I served the salad with my delicious zucchini bread muffins.
