Creamy Potato and Leek Soup
This wonderful soup is perfect for dinner. Creamy, hearty and flavorful is the key to the perfect dinner option anytime of the week.
Ingredients
8 tbsp butter (1 stick)
1 large leek or sweet onion
7 cups vegetable stock
7-8 russet potatoes, peeled and chopped
2 cups heavy cream
1 tbsp Worcestershire sauce
Salt and pepper to taste
Crusty bread
Instructions

Heat a large pot on the stove and add the butter melting it in the pan. Add the leeks or onion to the pot and sauté for about 5 minutes on medium heat.

Add the vegetable stock and potatoes. Simmer for about 15 minutes or until the potatoes are fork tender.

Using an immersion blender, blend the soup until smooth and creamy. If needed, strain the soup through a fine mesh strainer.

Stir the cream into the soup, adjust salt and pepper to taste, serve with crusty bread and enjoy.
