Christmas Frittata

Christmas Frittata

This Christmas Frittata is a delicious breakfast idea on Christmas morning or any day of the year!

Ingredients

1 medium onion, diced
1 small red bell pepper, diced
1 small green pepper, diced
2-3 medium size Russet potatoes
12 Oakdell eggs
1 1/2 cup diced ham
1/2 cup cream
salt and pepper to taste
Olive oil as needed

Instructions

Preheat your oven to 350 degree’s.

Wash, shred, rinse and strain/drain the russet potatoes.

Heat an oven safe fry pan on the stove and add enough olive oil to lightly coat the bottom of the pan.

Add the diced onion and bell peppers to the fry pan and sauté for for couple of minutes.

Add the prepared potatoes to the to the pan and sauté for about 5 minutes.

In a large bowl, add the Oakdell eggs, diced ham, cream, salt and pepper and whisk everything together.

Pour the egg mixture over the potatoes and place the pan in the oven. Bake the eggs for approximately 20 minutes or until cooked through. Serve and enjoy!
