Ingredients
1 pound beef chuck roast
2 chipotle peppers in adobo sauce, minced
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon lime juice
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
Salt and pepper, to taste
8 small flour or corn tortillas
Toppings:
Chopped fresh cilantro, Diced tomatoes, Finely shredded lettuce, Sliced avocado, Crumbled queso fresco, Lime wedges

In a bowl, combine the minced chipotle peppers, minced garlic, olive oil, lime juice, cumin, smoked paprika, dried oregano, salt, and pepper. Mix well to form a marinade.
