Ingredients

For the Dressing: 1 tbsp minced garlic
1 tbsp anchovy paste
1 tbsp dijon mustard
2 tbsp fresh lemon juice
1 tsp kosher salt, or to taste
1 egg yolk
1/2 cup extra virgin olive oil
For the Salad: 1 head romaine lettuce, chopped
2 cups croutons
2 chicken breasts, grilled fully cooked, cooled

Instructions

In a spacious bowl, combine minced garlic, anchovy paste (2-3 anchovy fillets), Dijon mustard, fresh lemon juice, kosher salt, and the egg yolk. Whisk the ingredients until perfectly blended.

Slowly drizzle the extra virgin olive oil into the mixture while whisking, creating a creamy emulsion. Adjust the seasoning with salt and pepper to your liking.

Make sure to thoroughly wash and dry the chopped romaine lettuce before adding it to the dressing.
