Breakfast Tostada
A delicious breakfast is so important and the American Heart Association agrees. This wonderful recipe is courtesy of the AHA and will be a breakfast hit!
Ingredients
4 - 6 inch corn tortillas
1 red bell pepper, diced
1/2 cup diced onion
1 medium tomato, diced
2 tbsp fat free cream cheese
2 large eggs
2 large egg whites
1 medium avocado
1/4 cup chopped fresh cilantro or parsley
Pickled jalapeños
Cooking Spray
Instructions

Preheat your oven to 400 degree’s.

Lightly spray both sides of the corn tortillas with cooking spray and arrange them on a baking sheet, single layer.

Bake the corn tortillas until they are golden brown (about 8-10 minutes).

Remove from the oven and cool.

While the corn tortillas are cooling, heat a large saute pan on the the stove and lightly spray with cooking spray.

Sauté the bell pepper and onion for about 5 minutes or until they turn soft. Add the tomato and and cream cheese. Continue sautéing until the mixture comes together and the cheese has melted.

Remove the vegetable mixture form the pan and scramble the eggs.

Spread the avocado over the baked corn tortillas and evenly divide the vegetable mixture over top of the avocado as well as the scrambled eggs.

Sprinkle with freshly chopped cilantro or parsley and pickled sliced jalapeños and enjoy!
