Bean or Fish Ceviche

Bean or White Fish Ceviche

Looking for a great side salad or refreshing dinner idea? Ceviche is a great idea for dinner or a side salad. You can make it with or without fish, your choice. However you choose to enjoy this wonderful dish is up to you!

Ingredients

1 cup cooked beans OR chopped raw white fish
1 tomato, deseeded and diced
1 small red onion, finely diced
1 small cucumber, peeled and finely diced
1 medium carrot, finely shredded
1/3 cup freshly chopped parsley
1/4 cup lemon juice
1 avocado, diced
salt and pepper to taste

Instructions

If you choose to use raw fish be sure it is fresh, no odors, firm and good coloring.

Add either beans or the raw fish to a large bowl. If you choose you can combine both.

Add the remaining ingredients to the bowl and lightly toss everything together to combine. If using raw fish, cover and refrigerate for at least an hour before serving.

Serve as a side salad or with chips. Enjoy!
