Ingredients

16 oz pad thai noodles
2 tbsp vegetable oil
2 cloves garlic, minced
1/2 cup tofu, diced
2 eggs, beaten
1 cup bean sprouts
1/2 cup green onions, chopped
1/4 cup crushed peanuts
Lime wedges, for serving
2 cups cooked shrimp, chicken, or pork
For the sauce: 3 tbsp fish sauce (or soy sauce for a vegetarian version)
2 tbsp tamarind paste
2 tbsp brown sugar
1 tbsp rice vinegar

Instructions

Prepare Noodles: Start by cooking the pad thai noodles according to the package instructions. Drain and set them aside.

Create the Sauce: In a small pan, whisk together the fish sauce (or soy sauce for a vegetarian twist), tamarind paste, brown sugar, and rice vinegar. Bring it to a boil, let it simmer for 3 minutes, and then remove it from heat. Set the sauce aside.

Sauté Tofu and Garlic: Heat the vegetable oil in a large pan or wok over medium heat. Add the minced garlic and diced tofu. Sauté for 2-3 minutes until the tofu turns lightly brown.

Scramble Eggs and Combine: Push the tofu to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until they are fully cooked, then mix them with the tofu, along with the cooked shrimp, chicken, or pork.

Mix Noodles and Sauce: Add the cooked rice noodles to the pan, followed by the sauce. Toss everything together until well combined and heated through.

Add Vegetables: Incorporate bean sprouts and green onions into the pan and cook for an additional 1-2 minutes until the vegetables slightly soften.
