Tortellini Soup
Here’s an easy idea for dinner, tortellini soup. Use prepared tortellini to create a deliciously simple soup for dinner on a cold winters night!
Ingredients
1 medium onion, diced
3 carrots, diced
4 celery stalks, diced
4 garlic cloves, minced
1 tbsp freshly minced ginger
12-14 mini petite Klondike potatoes
1 pkg prepared tortellini, 9 ounce package
4 cups chicken stock
4 cups vegetable stock
Olive oil

Instructions

Heat a large sauce pan on the stove and add enough olive oil to lightly coat the bottom of the pan.

Add the diced onion, carrots, celery, minced garlic and ginger. Sauté the mixture for about 3 minutes or until very fragrant.

Add the Klondike petite potatoes (cut them into small bite size pieces if needed) along with the prepared tortellini, chicken and vegetable stock. Bring to a simmer and cook for about 10 minutes or until the vegetables are cooked through.

Serve the tortellini soup with fresh baked Rhodes rolls and enjoy!
