Zuppa Toscana

Zuppa Toscana

This delicious Tuscan style soup is really easy to make and delicious. Warm, cozy and so flavorful this Italian style soup is always a great choice for dinner.

Ingredients

1 pound Italian sausage
1 tbsp minced garlic
1 medium onion, diced
3 potatoes, diced
6 cups chicken stock
1 bunch kale
1 cup cream
Shredded parmesan cheese
Salt and pepper to taste

Instructions

Cook the Italian sausage in a large pot.

Add the minced garlic, onion and diced onion to the pot and sauté for a couple of minutes.

Pour in the stock and simmer for about 10 minutes or until the potatoes are fork tender.

Pour in the cream and stir to combine everything. Remove the leaf portion of the kale and add it to the soup.

Serve the soup with some freshly cracked pepper on top and a sprinkle of shredded parmesan cheese.
